Preheat oven at 170°C. &lt;br /&gt;&lt;br /&gt;Combine dates, walnuts and self-raising flour in a plastic bag and shake well until fruits and nuts are well-coated with flour. &lt;br /&gt;&lt;br /&gt;Cream margarine, sugar, honey and emulsifier until light and creamy. Gradually drizzle in milk and beat until well-combined. Should the mixture curdle, add 1–2 tbsp sifted dry ingredients and continue to beat. Add yoghurt and essence to mix. &lt;br /&gt;&lt;br /&gt;Fold in sifted dry ingredients in batches and mix in date and walnut mixture. &lt;br /&gt;&lt;br /&gt;Turn mixture into prepared cake pan and bake for 40–45 minutes or until skewer inserted into the centre of the cake comes out clean. &lt;br /&gt;&lt;br /&gt;Cool cake in the pan for 10–15 minutes before turning out onto a wire rack to cool completely. Gradually add in sugar and beat until fluffy. Add eggs one at a time, beating well each time.&lt;br /&gt;&lt;br /&gt;Beat in sifted dry ingredients alternately with buttermilk. Stir in vanilla, mango peel, mangoes and nuts.&lt;br /&gt;&lt;br /&gt;Bake in a 25cm (10-inch) diameter round cake ring at 350 ºC for one hour. Turn out on the rack. Let cool for 15 minutes and glaze.&lt;br /&gt;&lt;br /&gt;For the garnish, use fresh mangoes (diced) and crushed macadamia nuts. Grease and line the base of a 21cm round cake tin. Preheat oven at 180 ºC.&lt;br /&gt;&lt;br /&gt;Put butter, sugar and jam in a small saucepan over very low heat. Use a hand whisk to stir until butter has melted and the sugar has dissolved.&lt;br /&gt;&lt;br /&gt;Place sifted dry ingredients in a mixing bowl, add in melted ingredients and stir gently to combine. Add the egg yolk and blend well with a hand whisk. Beat egg whites until just stiff, then fold into the cocoa mixture.&lt;br /&gt;&lt;br /&gt;Turn mixture into prepared pan. Level up the surface with a spatula. Bake in preheated oven for 50 minutes or until cake is cooked through when tested with a skewer.&lt;br /&gt;&lt;br /&gt;Cool cake in the tin before turning out onto a wire rack.&lt;br /&gt;&lt;br /&gt;For the ganache topping: combine cooking chocolate and cream in a deep saucepan and stir over very low heat to melt the chocolate. Stir gently with a hand whisk until mixture is smooth. Leave aside to cool.&lt;br /&gt;&lt;br /&gt;Slice off the top of the cake to yield a neat flat surface. Turn the cake upside down, then brush with melted jam.&lt;br /&gt;&lt;br /&gt;Pour the ganache topping over. Use a long palette knife to smoothen the top so that the ganache will flow down the sides neatly. Sprinkle the top with toasted almond flakes. Bake a double batch, for yourself and to give away to friends who have been good&lt;/i&gt;&lt;br /&gt;&lt;br /&gt;125g butter, softened&lt;br /&gt;375g sugar&lt;br /&gt;3 eggs&lt;br /&gt;15g chocolate powder&lt;br /&gt;685g flour&lt;br /&gt;2 1/2 teaspoons baking powder &lt;br /&gt;1/8 teaspoon salt 1 lemon, zested &lt;br /&gt;1 tablespoon aniseeds &lt;br /&gt;125g almonds, coarsely chopped and toasted&lt;br /&gt;2 tablespoons Grand Marnier (optional)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat the oven to l80ºC. Cream the but ter and sugar together until light and fluffy. Add the eggs, one at a time, fol lowed by the chocolate powder.&lt;br /&gt;&lt;br /&gt;Combine the flour, baking powder and salt; add to the chocolate mixture with the lemon zest, aniseeds, chopped almonds and Grand Mamier, if using. Mix well.&lt;br /&gt;&lt;br /&gt;Divide the dough in half. With lightly moistened hands, shape each half into a 22x5cm log. Flatten the logs slightly.Wrap the dough with cling film and refrigerate for 1 hour.&lt;br /&gt;&lt;br /&gt;Cut the logs into long, thin slices and place on a silicone mat- or paper-lined baking tray Bake for 10 minutes - or longer for crisper biscotti. There should be no lumps. Melt butter over medium heat. Add coffee and beat with an electric beater till smooth. Fold in pecans. Turn into wax paper lined loaf pan. Smooth top with knife dipped in warm water. Refrigerate till set. Add onion and garlic; saute until tender. In a bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture. Pour half into a large resealable plastic bag; add steak. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade.&lt;br /&gt;Drain and discard marinade from steak. Cook over a medium-low heat, stirring constantly until sugar dissolves and mixture comes to a boil. Add instant coffee granules. Reduce the heat and let mixture simmer without stirring for 13-15 minutes or until the syrup has thickened and reduced. Add coffee emulco after the fire is turned off. Leave syrup aside to cool completely. Whisk yoghurt and cooled coffee syrup in a small bowl and leave aside. &lt;br /&gt;&lt;br /&gt;Preheat oven to 180°C. Grease a 22cm fluted cake pan. &lt;br /&gt;&lt;br /&gt;Beat butter, brown sugar and essence until mixture is pale. Add in eggs, one at a time, beating well after each addition. First make the praline so that it has time to cool. Put the sugar and almonds into a small thick saucepan over gentle heat.&lt;br /&gt;&lt;br /&gt;When the sugar is dissolved, stir carefully to coat the almonds and continue cooking until rich golden brown and smelling of toffee.&lt;br /&gt;&lt;br /&gt;Pour on to an oiled baking tin, spreading it out. When cold and brittle, remove and chop small or grind in a mill, but not to fine powder.&lt;br /&gt;&lt;br /&gt;Mix the egg yolks and sugar in a large bowl. Dissolve the coffee in boiling water and add gradually. Whisk over a saucepan of boiling water until thick and foamy.&lt;br /&gt;&lt;br /&gt;Remove from heat and continue whisking until cold. Soak the gelatine in the cold water, dissolve over gentle heat and stir into the souffle mixture.&lt;br /&gt;&lt;br /&gt;Place in a basin of cold water with ice and stir gently from time to time until beginning to set.&lt;br /&gt;&lt;br /&gt;Meanwhile, whisk egg whites until stiff but not dry. Whip cream into soft peaks and fold about two-thirds into the coffee mixture.&lt;br /&gt;&lt;br /&gt;Fold in egg whites and half the praline. Turn into the souffle dish, smooth top and chill. Add essence. &lt;br /&gt;&lt;br /&gt;Combine flour, chocolate chips and chopped toasted almonds in a clean mixing bowl. Stir in chocolate mixture. &lt;br /&gt;&lt;br /&gt;Take a tablespoonful of mixture out and shape into a ball. Stir over medium low heat until butter has melted and sugar dissolved completely. &lt;br /&gt;&lt;br /&gt;Remove pan from the heat and stir in cocoa, essence and brandy. Stir well until mixture is free from lumps. &lt;br /&gt;&lt;br /&gt;Return pan to the heat and bring slowly to the boil stirring constantly. Reduce the heat and cook until the fudge reaches a stage whereby the mixture forms a soft “ball” when dropped into a bowl of cold water. &lt;br /&gt;&lt;br /&gt;Pour the mixture into a lightly greased baking tray. Leave aside to set and cool.
